1/2 teaspoon Rosemary, dried
1/4 teaspoon Thyme, dried
1/2 tablespoon Olive Oil
1 piece Lemon
1/4 teaspoon Iodized Salt
1/4 teaspoon Ground Black Pepper
1 tablespoon Olive Oil for frying

I find that baking food like fish, beef, or chicken makes the food taste better, and it is a healthier approach to cooking. But not all people like the soft texture of the fish skin. So here’s a baked salmon fish recipe with a twist, it got crispy skin. Directions on how to do it are listed below or you may also watch the video on how to make it. Enjoy!

PREPARE THE OVEN

Pre-heat the oven at 400°F or 200°C.

PREPARE THE GARLIC

Peel off the garlic. To peel easier, smash the garlic with the flat of a knife or using a mortar and pestle.
Chop the garlic. For large garlic cloves, make a vertical or horizontal slit first to be able to chop faster. Hold the tip of the knife with one hand and use the other to rock the blade back and forth.

GRIND THE HERBS

Place the dried rosemary in the mortar followed by the dried thyme.
Grind the herbs using the pestle until they become powder in form.
Mix in the iodized salt and ground black pepper. Set aside.

PREPARE THE LEMON ZEST

Grab the lemon, make sure it is properly washed and grate the lemon peel to extract the zest. Finely grate the lemon zest to about 1 tablespoon. Lemon zest is great for flavoring fish and giving it citrus aroma.

SEASON THE FISH

Combine the flavorings together, starting with the garlic and then the herb mixture. Mix very well.
Place the salmon, skin-side down. Rub the herb flavoring and lemon zest on the salmon. Use your hand to press the flavoring on the fish. Flip the salmon and do the same. When all sides have been seasoned, flip the salmon with its skin side down. Then drizzle with olive oil.

Spread the seasoning over the salmon fillets.
Cover with aluminum foil to cook evenly.
Bake at 400F for about 15-20 minutes or until salmon flakes easily with fork.

FRY THE FISH SKIN

Heat the pan on high temp and then pour 1 tbsp. of olive oil. Place the salmon, skin-side down. Fry until the skin turns brown and crispy then transfer it in an aluminum tray or baking tray. Remove the burnt garlic (if any) off the skin so it won't leave a bitter taste.

BAKE THE FISH

Bake the salmon at 400F for about 15-20 minutes or until the fish starts to flake easily with a fork and the flesh looks opaque.

SERVE

Serve the salmon with steamed rice or with a side of vegetables, such as steamed broccoli. And don't forget to include the garlic, herbs and lemon zest left in the tray because they are also full of flavors. And finally, a slice of lemon.
