Fried Chicken with Baked Potatoes

This is a very simple dish of chicken and potatoes. These two are the top selling products in known fast food chains, commonly known as Fried Chicken and French Fries. If you ask a grown up of one of the remarkable character in his childhood, he would say the name of the fast food chain's mascot. But I don't like my future children to be like that. I will raise them eating the "food made by mama". I hope I am not the only housewife who thinks this way.

Ingredients:
Oil
Peppercorn
Cajun
Salt
Chili Flakes
Potatoes
Chicken (quarter cut)

Procedure:

Dilute Cajun powder in a little oil. Add salt, freshly-crushed pepper, and chili flakes in the mixture. Use this mixture to marinade the chicken. Heat oil in pan. Fry the chicken until cooked. Set aside.

Cut potatoes into half leaving the skin on. Boil them in brine (water and a little salt). Once tender, drain the potatoes. Add cheese on top and drizzle with oil (you may use olive oil but I only used cooking oil since that is what's available) and then bake in a pre-heated oven until the cheese melts.

Serve together, or with rice.



For dippings, you may want to cook a gravy or use tomato catsup. Both tastes yummy :-)
