Potato Croquette



There was this restaurant named Gusto Italiano that my husband and I love to dine in. We usually order Spaghetti Allo Scoglio or seafood spaghetti which is served with slices of bread and potato croquette. That is the inspiration of this dish.. :-)

Ingredients:
4 pcs. Potatoes, medium size
2 tbsp. Butter
1 cup Flour
1 cup Breadcrumbs
1/2 cup Milk, evaporated
1 Egg
Salt
Pepper


Procedure:

Peel and cut the potatoes into half (or quarter, if too big). Boil them in water with a pinch of salt and pepper.


Drain the potatoes and mash them with a masher (or fork, if you don't have any). Do this while the potaotes are still hot.


While mashing the potatoes, add butter and milk. Keep mashing the mixture until is is very smooth and creamy but fairly stiff. Add salt and pepper to taste. The taste should be similar to the regular mashed potato. But you can adjust it to however you like.

Form the potatoes into rolls. Make an assembly line for breading the potatoes. Have three different bowls for egg, flour, and breadcrumbs. You would want to put the egg bowl in the middle of flour and breadcrumbs because this is the sequence: Dip the potato roll in egg, roll it on the flour, dip again in egg, and then roll it in breadcrumbs.




Deep fry the breaded potatoes in hot oil until golden brown. Note: If your oil is not hot enough, potatoes will just absorb the oil and as result, it will not be crispy.
