Mussel Soup |
We bought fresh seafood last weekend... mussels, shrimp, fish, oysters... yum! And since the rainy season is already here (in the Philippines) and it is Ed's special request, I decided to cook a very simple but comforting food to warm our hungry tummies.
Ingredients:
1/2 kilo mussels, washed & soaked in water
1 whole ginger, cut into strips
5 cloves garlic, sliced
1 piece onion, sliced
1 tablespoon fish sauce
1 tablespoon cooking oil
2-3 cups hot water
salt
pepper
It is very important to wash and soaked the mussels with clean water first so please don't skip that part.
Saute the ginger, garlic and onion in the cooking oil. When it's starting to turn into brown and you can definitely smell the aroma, add in the drained mussels. Stir fry. Season with salt and pepper. When the mussels have already opened, add the hot water and fish sauce. Bring to boil and reduce to about 3/4 of the soup so you can really taste the mussels in the soup. Season with more salt and pepper to taste.
